The annual tasting extravaganza that is the Salon du Chocolat is getting underway in the French capital, bringing together thousands of chocolate makers and enthusiasts. One of this year's biggest themes is "bean-to-bar", when producers oversee the entire process of turning cocoa beans into chocolate bars from start to finish.
