Protein quality is determined by the body's ability to absorb amino acids.

Jakarta - Expert from the Bogor Agricultural Institute (IPB) Prof. Dr. Epi Taufik S.Pt MVPH M.Si said that assessing the quality of a protein source is not only seen from the quantity but also from the body's ability to absorb amino acids from the source.

"What makes up protein is amino acids. There are amino acids that our bodies cannot make, so they are called essential amino acids, from that side, the one that contains the most and complete essential amino acids is animal protein," said Prof. Epi who is also a Professor of Milk Science and Technology at the Faculty of Animal Husbandry in a presentation and discussion at the Zona Main So Nice event in Jakarta, Friday.

He said the body's ability to absorb essential amino acids from protein sources is seen from the protein digestibility-corrected amino acid score (PDCAAS) and the digestible indispensable amino acid score (DIAAS).
