Dr Chintal Patel, from the NHS, claims there are (widely) unknown benefits to freezing bread.

Although storing food in the refrigerator helps it last longer, Patel says there are health benefits to keeping some items at cold temperatures.

In a video clip she shared on her TikTok account, Patel explained that freezing bread overnight and then reheating or toasting it changes the molecular structure of the starch in the bread to a more resistant starch.

“This is the type of starch that feeds gut bacteria and helps build a healthy microbiome,” she said.

Patel explained that freezing bread also leads to a 30% decrease in the glycemic index (that is, the sugar index, which is  a system for classifying foods), and there are similar benefits that can be achieved from cooling pasta and rice in the same way.

It is worth noting that the British Health Services Authority explained that “starchy foods are a good source of energy, and the main source of a group of nutrients in our diet. In addition to starch, they contain fibre, calcium, iron and B vitamins. Just be careful of the added fats you use when cooking and serving them.” "Because this will increase the calorie content."
